Comfort food is a must on our dinner table every week. Everyone looks forward to enjoying this dinner. I call it my weekly special.

Slow Cooker Honey Garlic Chicken

This is one of my favorite one-pot recipes. I make slow cooker recipes in all seasons. You can use chicken thigh or chicken breast, it’s up to you.

I prefer bone-in chicken thighs. The recipe requires 10 minutes of prep time and 8 hours of cooking time.

You need a slow cooker and a baking sheet. The ingredients include baby carrots, chicken thighs, parsley, green beans, and red potatoes.

For the sauce, you need a mix of ketchup, sodium soy sauce, oregano, red pepper flakes, basil, honey and ground black pepper.

Baked Potato Soup

This thick soup is the ultimate comfort food. The tools required are a Dutch oven, soup bowls, a garlic twister, a box cheese grater, and storage containers.

The recipe requires 10 minutes of prep time and 35 minutes of cooking time. The ingredients include Russet potatoes, pepper, butter, chicken broth, chives, cheddar, half& half, garlic, cheese, bacon and sour cream.

I prefer half & half over milk as it makes the broth thicker. You can either use sour cream or Greek yogurt. Keep the leftovers in an airtight container in the fridge and it will be good for up to 3 days. It freezes well for 3 months.

Funeral Potatoes

It is one of the most loved party foods. You can serve it as a side dish. You need a 9×13 casserole dish. It’s a perfect make ahead recipe and you can make it even 2 days in advance.

The recipe requires 10 minutes of prep time and 40 minutes of cooking time. The ingredients include hash potatoes, cheddar cheese, butter, sour cream, onion and chicken soup.

For the topping, you can use cornflakes cereal and butter. It freezes well for 3 months. Make sure to keep it in an airtight container.

Chicken Bacon Ranch Wrap

It is a quick recipe and requires only 15 minutes of prep time.

The ingredients include flour tortillas, bacon, tomatoes, green onion, ranch dressing and rotisserie chicken.
